When you give the body the healthiest foods, you begin to notice a difference rather quickly. People begin to feel much better, more clear-headed; less tired and have more energy throughout the day.

What we see from a medical perspective is that elevated blood sugar and blood pressure normalize quickly and we often see the need to reduce their medications for blood sugar diabetes and blood pressure heart conditions in as little as hours. We see weight loss, too, about five to seven pounds on average in the first week. This is not a crash diet or about dieting or food restriction but a way of eating the healthiest foods for life.

In the beginning, people are enthusiastic because they start seeing benefits so quickly. What we can measure is a quick reduction in biomarkers and a dramatic reduction or elimination of medication.

For those who are able to stick with the lifestyle, we see the prevention and treatment of disease along with the reversal of disease even in those who are seriously ill. There are many problems with the American diet today that need to be addressed so just pick one and start there. From my perspective, we can start with the two most important ones. Doing more of the first one helps us to cut back on the second one. Make breakfast a bowl of oatmeal and fruit every day, or make a few dinners a week a healthy bean, rice and veggies dish, or both.

The best way to do this is by simply filling your plate with more of the healthiest foods and eating them first, because as you do that, you will naturally eat less of the unhealthy foods. Your overall caloric intake will also go down naturally just by eating more of the healthiest foods first. For example, by eating a healthy salad, a bowl of soup or an apple before your meal, your overall caloric intake goes down. I like to show people that there is not only a scientific basis for this but also an intuitive common sense to it.

It hits you at a deep, intuitive gut level. We see what the problem really is and how we have been fooled and are fooling ourselves about our diets and health. It gives us the opportunity to step back, see the reality of where we are, what the problem is and what a healthy diet is and can do for us.

Then once people start making the changes, their bodies respond in kind and they feel great. It is important for people to know how difficult this is if they are going to be successful at it and, without a doubt, there are two big challenges. Eating a whole foods plant-based diet, meaning a diet free from processed foods and any animal products conveys huge health benefits. So a lot of the struggles that people have with food and health, just seem to start going away the more they do that.

And in addition, we see things, allergies go away or auto-immune conditions get better; lupus and arthritis, rheumatoid arthritis. Many people who have made the switch to a vegan diet have noticed improvements in their mental and emotional state. Some of the mental benefits are, sometimes maybe not something that you can directly measure, but I know personally and from working with people over the years, a much clearer mind, ability to think and focus and attention really becomes much sharper.

Also, in general, you experience a better mood, you feel better, and experience less depression and anxiety, especially when you couple it with an active lifestyle. Eating well and exercising and being active have shown to be very effective in reducing mild to moderate depression. So people having anxiety or mental issues, it can also really help.

There is an unfounded concern that by adopting a vegan diet one will not consume enough protein. However this is completely untrue as plant-based proteins are vastly superior to those derived from animals which are detrimental to health. Neal D. In fact you are better off getting protein from plant sources. While animal protein can be hard on the delicate tissues of the kidneys, plant proteins appear to be free of this problem.

They are also free of the risks of calcium loss and kidney stones associated with animal protein. Add curry powder. Stir well and serve. I'm T2 diabetic. What can I use in place of all the starches rice, potatoes. I like the fact that all of these recipes are quick and easy but would like to substitute the starches. My next time through it, I am going to take a few notes. I will be wanting to remember this stuff when I go shopping again. And by the way I was going to loan this one out to good friends.
